When should the
timelapse
filming start?

Before your project
starts.

People will be
standing there on the
opening day of your project thinking "Wow. How did they make it? What was this place like before?".

If the timelapse camera is the first piece of equipment running on site you will be the visionary. You'll be pulling out the the footage to make the bosses look good and they'll remember you for it.
